Easy, delicious maple recipes

Spruce Tip and Maple Sugar Rub

A salty, spiced rub that is lovely on grilled veggies, roasted potatos or meat dishes. We enjoyed foraging these spruce tips and used our maple sugar to sweeten.



Spruce tip maple rub

We used a food processor to blend these ingredients but chopping and mixing works well too!


Spruce tip and Rosemary (for red meats or potatos):

  • 3 parts spruce tips

  • 2 parts maple sugar

  • 2 parts sea salt

  • 1 part fresh rosemary (dried is ok too)

  • 1 part ground black pepper



Spruce tip and Dill (for fish or grilled veggies):

  • 3 parts spruce tips

  • 2 parts maple sugar

  • 2 parts sea salt

  • 1 part fresh dill (make sure the dill is washed and dried completely or use dried dill)

  • 1 part ground black pepper


If you don't have access to fresh or dried spruce tips, you can grab some Spruce Tip Sugar from Wild Muskoka and slightly decrease the amount of maple sugar.
