I have been known to be a tad bit grumpy in the mornings before I've eaten and camping trips can be especially challenging. This is a great snack to prepare before tucking in for the night so you'll have a grump-free morning of slow-living!
1⁄8 cup of chia seeds
1⁄2 cup of almond milk
1 tbsp of shredded coconut
1 tbsp of maple syrup
Cocoa powder (or can mix in 1/2-1 tsp cocoa powder + 1/4 cup raspberries to base ingredients)
1. Gently stir together the chia seeds and almond milk in a mason jar
2. Add maple syrup and shredded coconut, shake jar until chia seeds are dispersed
3. Let it rest overnight in the fridge
4. Gently stir the pudding until there is no clumping. Add in desired toppings and enjoy
