Vanilla-infused spiced pear cake topped with bourbon barrel aged maple whip.
Ingredients:
3 large pears, sliced thin and tossed in a splash of lemon juice
1/2 cup Pure Maple Syrup
6 T melted butter
1 T olive oil
2 large eggs
1.5 tsp pure vanilla extract
1/2 cup milk
1.5 cup all purpose flour
1.5 tsp baking powder
3/4 tsp sea salt
1/2 tsp ground nutmeg
1/8 tsp ground cardamom
1/4 tsp ground cinnamon
For the maple bourbon whip:
1/2 cup whipping cream
Procedure:
Preheat oven to 350F
Line a spring form cake pan with parchment paper
Whisk together dry ingredients in a large bowl
Mix eggs, maple syrup, butter and vanilla in another bowl. Blend until smooth
Add wet ingredients to dry and mix well
Pour half of the mixture in the cake pan and spread to edges
Layer pears on batter
Pour the remainder of the batter on pears and top the batter with remaining pears
Bake for 45-55 min until golden brown and knife comes out clean in the middle
While the cake is baking, add whipping cream and bourbon barrel aged maple syrup to a medium sized bowl. Beat on high until fluffy
Let cake cool for 5 minutes before slicing
Top each slice with maple bourbon whip
