Spiced Layered Pear Cake with Maple Bourbon Whip

Vanilla-infused spiced pear cake topped with bourbon barrel aged maple whip.



Ingredients:

  • 3 large pears, sliced thin and tossed in a splash of lemon juice

  • 1/2 cup Pure Maple Syrup

  • 6 T melted butter

  • 1 T olive oil

  • 2 large eggs

  • 1.5 tsp pure vanilla extract

  • 1/2 cup milk

  • 1.5 cup all purpose flour

  • 1.5 tsp baking powder

  • 3/4 tsp sea salt

  • 1/2 tsp ground nutmeg

  • 1/8 tsp ground cardamom

  • 1/4 tsp ground cinnamon


For the maple bourbon whip:


Procedure:

  • Preheat oven to 350F

  • Line a spring form cake pan with parchment paper

  • Whisk together dry ingredients in a large bowl

  • Mix eggs, maple syrup, butter and vanilla in another bowl. Blend until smooth

  • Add wet ingredients to dry and mix well

  • Pour half of the mixture in the cake pan and spread to edges

  • Layer pears on batter

  • Pour the remainder of the batter on pears and top the batter with remaining pears

  • Bake for 45-55 min until golden brown and knife comes out clean in the middle

  • While the cake is baking, add whipping cream and bourbon barrel aged maple syrup to a medium sized bowl. Beat on high until fluffy

  • Let cake cool for 5 minutes before slicing

  • Top each slice with maple bourbon whip
