Maple Pumpkin Loaf

PSL lovers, this one is for you!


Cream together:

1 3/4c maple sugar

1c coconut oil

4 eggs

1 can of pumpkin pie puree (19 oz)


Sift together:

1/2 tsp ground cloves

1 tsp ground allspice

1 tsp ground nutmeg

1 tsp ground cinnamon

1 tsp baking powder

2 tsp salt

2 tsp baking soda

3 1/2c flour


Alternate adding 2/3c water and dry ingredients to wet ingredients until it's all combined. Mix in 1c chopped walnuts if you'd like an extra crunch!


Bake in loaf pan (will make 2 ) for 1 hour at 350F. If you'd rather do muffins, bake them for 20-25 mins at the same temperature.


Bonus points! Add a sprinkling of Maple Pépites when there is about 10-15 minutes of baking left.
